Are you in the mood for a hearty and wholesome meal? But you feel like you just don’t have the time to cook it… Or do you think it will be expensive to make? Let me introduce you to your new best friend, the slow cooker. They are the perfect one-stop-device to churn out the most delicious meals, including this slow cooker chilli recipe, with very little effort indeed. Also slow cookers are great for using up those veg in your fridge that look a little sad. Honestly, I’ve saved so much money by not throwing away veg that has gone a bit soft. I simply use them in a slow cooker recipe instead of binning them. You don’t notice any difference in taste! And it makes you feel like a legend for not throwing away that soft looking pepper (again).
Believe me, slow cookers will become your new best friend. Whether you are a busy mum or stretched for time at work. You will come home to a hearty and delicious meal at the end of your day. All you need to do is spend 5 minutes pulling all this together. Yep that’s it. You can even prep these in advance the night before and pop it on in the morning. Or you can just throw the ingredients altogether as part of your morning routine. Mmm I can smell the yummy food already! Go on give it a go…
You might be thinking HOW is just for £2 though? Well, I’ve done the maths. Because you are using 750g of Mince which is a pretty big pack, and if you are shopping in Tesco, they now price match Aldi on a lot of the ingredients used in this recipe. (Nice one.) This recipe works out as about £2 per portion and that includes the additional guacamole and with very BIG generous portions too! That is the joy of cooking a big batch for 6+ people (even if its just two of you). As you can freeze this, or use it up for the whole week to save you cooking on other days. Win Win.
So, this recipe is very versatile too. As I like this with Quinoa or white rice, but it also works well with mashed potato. Or you can be a bit naughty and have this slow cooker chilli recipe with potato waffles and a fried egg on top for your brunch the next day! It really is a treat.

This quick & hearty chilli con carne will warm your soul & heat your heart! The optional Guacamole on top is a decision you wont regret. This is a great dish to bulk cook and freeze the leftovers. Perfect for those who don’t have a lot of free time to cook. This just takes 5 minutes to prep and you’ll get a gorgeous wholesome meal at the end of your day, EASY!

- Put in your raw Mince into the slow cooker, Break up with a spoon so it is separated out. Grate in your carrot and add in garlic with the mince and mix up. Its ok if your minced meat is still a little frozen, it might just give off more liquid than normal while cooking. But you can leave the lid off for a part of your cooking time to reduce the sauce down if you prefer it thicker.
- Add the spices, Smoked Paprika, Cumin and Chilli powder. The Smoked Paprika makes a delicious addition, try and find the Smoked version in your shop rather than just plain Paprika- you won’t regret it!
- Add in the Tomato Paste and Tinned Tomatoes along with all the vegetables and beans!
- Add in the Beef Stock and give everything a good stir.
- Pop the lid on and turn onto High for 6 Hours. You can cook it for longer, I have left this on 10+ hours before and its been great too. The longer you leave it, the nicer it tastes in my opinion. You won’t burn it with the liquid in there, just keep an eye on it throughout the day by peering through the glass lid!
- Dont be tempted to lift open the lid though! Its best to only stir this once halfway through the cooking. You want to keep all the heat in.
- Guacamole: You can mash up an avocado in a bowl. Add in 1 tsp of olive oil and a squeeze of lime. Give it a stir. This will give you the creamiest guacamole! A dash of sea salt is a dream on top too.
- Finish off with serving up your Chilli with either cooked rice or Quinoa. I used the microwave Quinoa pack. You heat for 1 minute and serve your chilli with grated cheddar & Guac. Yum!
